I am a Canadian resident, but currently in the UK on a vacation. I forgot to buy travel insurance before departure. Can I still buy travel insurance, starting from today to cover me for the rest of my trip? I only want single trip insurance and medical coverage.

It looks like there is chance that you may be able to get emergency medical coverage from a Canadian travel insurer if you have already left the country. However, in order to make sure that you’re not just purchasing medical coverage because you are already injured or sick, you may find that the policy doesn’t take effect for a few days after you’ve purchased the coverage.
That being said, you’ll likely find that many travel insurance companies do not sell coverage if you have already left for your holidays. In general, you can purchase travel insurance up until the day you leave, but not after. You’ll likely have to contact the individual travel insurers, either by phone or online to see if they’re able to sell you coverage.
If you’re having a hard time finding a Canadian company to insure you, in this particular situation, it may be possible to purchase ‘Visitors to (whichever-country-you-are-visiting) travel insurance.’ In Canada, coverage like this is available for people who have already arrived, so it seems realistic that other countries would offer a similar product. As you are in the UK you might want to call a travel agent there; they might be able to point you in the right direction.
